HOPE: How Ediens and VOMOND created the world's first living yogurt pearls. The future of FoodTech at SIAL Paris 2026

The modern health food industry is on the verge of a global transformation. Consumers are tired of a handful of pills and capsules, seeking to get health benefits directly from delicious, everyday food. The concept of "Food as Medicine" is turning from scientific theory into reality on supermarket shelves.

A real sensation in this area is the new product HOPE  — the world's first live yogurt pearls in an edible marine shell, created thanks to a unique collaboration between the Ukrainian biotechnology company Ediens  and the powerful manufacturer of innovative products VOMOND . Soon, on October 17–21, this revolutionary product will be presented at the main international food exhibition SIAL Paris 2026. We understand what makes HOPE unique, how the science works inside each pearl, and why this format will change our ideas about yogurt forever.

Synergy of science and production capacities

Creating an innovative product of this level requires a combination of two completely different worlds: deep fundamental science and large-scale industrial production.

On the one hand, Ediens  is a MedTech company with 37 years of experience in scientific research, based on the principles of 4P medicine (preventive, personalized, predictive, patient-centered). The company has unique proprietary strains of microorganisms with clinically proven effectiveness.

On the other hand, VOMOND  is a powerful manufacturer specializing in the mass production of encapsulated products (imitation caviar, balls for popular bubble tea drinks) and operates not only in Ukraine, but also in the European markets. The company's capacities allow it to produce up to 10 tons of capsules per shift.

VOMOND sought to introduce high-value functional food to global markets (India, China, Europe) by integrating an innovative "super ingredient". At the same time, Ediens was looking for the perfect format that would allow children and adults to enjoy consuming beneficial bacteria. This is how the idea of combining VOMOND's marine technologies with Ediens' microbiological expertise was born. In this partnership, Ediens is fully responsible for the scientific component and the supply of its own bacterial culture, while VOMOND provides high-tech production.

Anatomy of the HOPE Pearl: What's Inside?

The HOPE format is a true engineering and biological masterpiece. The product looks like perfect pearls measuring 8-10 mm. When you consume them, the edible shell pleasantly bursts in your mouth, releasing a thick, concentrated fermented yogurt. This process provides a unique gastronomic experience (similar to the youth-favorite bubble tea balls) but carries enormous benefits for the microbiome.

1. Base — A2 Milk.  Regular cow's milk often causes discomfort and inflammation in the intestines due to the presence of A1 beta-casein protein. HOPE is created exclusively from A2 milk — the genetically purest and safest option, which is easily absorbed by the body, without causing bloating or allergic reactions. The protein content in HOPE pearls breaks records for yogurts and is 12.4 g per 100 g of product , which makes it an ideal snack for athletes and supporters of a healthy lifestyle.

2. Live cultures and a proprietary strain.  Regular store-bought yogurts often don’t contain enough live bacteria due to aggressive pasteurization. HOPE is a true living ecosystem. Inside, the pearls are fermented with classic yogurt cultures: Streptococcus thermophilus  and Lactobacillus delbrueckii subsp. bulgaricus .

But the main scientific value is the integration of the exclusive author's strain Lacticaseibacillus paracasei "Ediens" SD-DSM 35775. Thanks to this, the total number of live microorganisms in the product is not less than 1×10⁸ CFU/g . This strain has a powerful evidence base, actively suppresses pathogenic flora, restores the intestinal mucosal barrier and regulates immunity.

3. Sea Shield: Kelp Shell.  The biggest challenge for any probiotic is surviving the aggressive acidic environment of the stomach. This is where the main technological advantage of the partnership with VOMOND comes in. The pearl shell is made from an extract of brown algae (kelp) — polyuronides, alginates, and pectin.

As the developers note, this marine capsule serves as a reliable biological "spacesuit". Alginates protect sensitive lactobacteria from the destructive effects of stomach acid. The pearl passes through the stomach intact, and only in the alkaline environment of the small and large intestines does it dissolve, delivering bacteria to where they are most needed, completely alive. In addition, the algae shell itself (pectin and alginate) acts as an ideal prebiotic - food for bacteria, stimulating their instant reproduction.

In the "Blue Food" trend

HOPE's launch coincides perfectly with the hottest global trend, "Blue Food." The world is actively searching for environmentally friendly, sustainable food sources derived from the sea (algae, microalgae), which are rich in trace elements and valuable acids.

Instead of forcing children or adults to drink tasteless suspensions or swallow pills, HOPE offers an innovative approach: disguising deep science in familiar, fun and incredibly tasty eating habits. Pearls can be added to salads, morning bowls, cold drinks (matcha or smoothies), or simply eaten with a spoon as an independent premium dessert. Due to the fact that pearls are perfectly stored in the refrigerator at a temperature of +0...+6 °C, bacteria remain in a state of suspended animation and do not turn sour, maintaining their ideal balance.

Conquering Europe: SIAL Paris 2026

Having created the world's first live yogurt format from A2 milk in an edible marine shell, Ediens and VOMOND are ready to make a loud statement on the international stage. On October 17-21, 2026,  the HOPE product will be presented at the international exhibition SIAL Paris  - one of the world's most prestigious platforms for innovation in the food industry.

The presentation at SIAL Paris is not just a demonstration of a new product, it is a demonstration that Ukrainian FoodTech and BioTech are capable of shaping global trends. This is a perfect example of the Co-creation model, where a manufacturing giant and an advanced scientific laboratory refused to compromise: VOMOND retained the possibility of mass scaling, and Ediens defended uncompromising clinical evidence and high concentration of its live cultures.

Conclusion

HOPE is more than just food. It’s an intelligent product, with every detail thought out: from hypoallergenic A2 milk and 12.4 grams of protein to a kelp shell that protects valuable bacteria from stomach acid. With the patented strain of Lacticaseibacillus paracasei “Ediens” SD-DSM 35775, these yogurt pearls are a powerful tool for daily support of the microbiome, immunity and mental health.

We are standing on the threshold of a new era of nutrition. We are waiting for the triumph of Ukrainian developers in Paris, and all the details about the product and its scientific basis will soon be available on the shelves of European and domestic stores!
